Chef Cirano's Chicken Soup
Ingrediants
1 one small, fresh, organically raised chicken. Cut in small size chunks. Use giblets if they look fresh and good, discard excessive skin,
24 cups of water,
4 T Salt: 2 T at the start then midway an additional 2 to taste,
1 t Cumin,
2 medium-sized tomato's,
1 clove garlic,
1 thick slice onion chopped,
1 hand full of cilantro chopped,
2 scallions chopped,
1 stick celery chopped,
1 hand full Italian parsley, chopped
2 carrots, cleaned and chopped.
Place all these ingredients in a large reducing kettle, bring to a boil, and then reduce heat and simmer for 1½-2 hours.
Strain off and discard the solids. Press the solids in a cloth bag get all the juice.
Serve by itself, with noodles, with fresh homemade bread, or with whatever else suits your fancy.
Preserve what is not immediately used in serving-sized plastic containers and freeze.
