Re-Appearing
Oatmeal/Raison Cookies
Pre-heat oven and baker's steel: 350° when your begin.
3/4 Cups Bread Flour
1/4 cup Granulated Sugar
1/2 cup Brown sugar
1 egg
1 stick sweet unsalted butter
1/2 Teaspoon Salt
1/2 cup raisons
1-1/4 cup Old-Fashoned Rolled Oats
In mixing bowl
1 egg,
1/2 cup brown sugar
1/4 cup Granulated Sugar
Cut 1 stick sweet unsalted butter into small bits and put them in.
In a small bowl
3/4 cups bread flour
1/2 cup raisons
1/2 teaspoon salt
mix this up so that all the raisons are covered with flour,
put this in the mixer.
In the same small bowl
1-1/4 cup Quaker Oats
put this in the mixer
mix just to the point where all the oats are mixed into the flour mixture and shut of the mixer.
With a tablespoon or teaspoon depending on whether or not you want large or small cookies, and with a bowl-scraper, remove cookie-sized lumps of cookie mix onto an ungreased (there is enough butter in them to keep them from sticking) cookie sheet.
Space evenly.
When all the lumps are placed on the cookie sheet, form and press them down to about 1/2 inch high. Use a small bowl of water and dip the fingers in that and dry them slightly on a paper towel - keeps the fingers from sticking to the cookie dough.
Bake for 20 min +/-
remove from oven and let stand on cookie sheet for 3 minutes
transfer to cooling racks and allow to cool.
