Pizza
Ingredients
Crust
4 cups "00" Pizza flower
1 t salt
1½ cups room temperature beer
1 pkg yeast
2 T Olive Oil
Filling
2 T Olive Oil
4++ T Tomato Sauce
1 lb pkg Cheddar cheese
1 lb pkg Dry Whole Milk mozzarella Cheese
Parmesan cheese
onion
Any additional toppings: salami slices, red peppers, curry spices, etc.
Recipe
Pre-heat oven and baker's steel to its highest temperature: usually 550°. Allow the oven and baker's steel to heat up for 45 minutes.
Crust
Combine 4 cups "00" Pizza flower
1 t salt
1½ cups room temperature beer
1 pkg yeast
2 T Olive Oil
in mixing bowl,
mix for 10 minutes,
tightly cover bowl with plastic wrap and allow to ferment over night.
Kneed back and divide into two and form them into balls
allow them to rise for 2 hours.
Roll out to thin circles with raised edge to the size of a cookie sheet; approximately 14".
Roll out to manageable circles on a bread-board, transfer to parchment paper on a cookie sheet to finish rolling out to size.
Filling
Chop up cheeses, onion and other toppings that need chopping to bits about ¼" in size.
Paint crust with olive oil,
then spread on the tomato sauce,
sprinkle to roughly cover with mozzarella cheese,
do the same thing with the cheddar cheese,
add any further toppings you may desire
sprinkle over all the Parmesan cheese.
Use the cookie sheet to slide the pizza (on the parchment paper) directly onto the baker's steel and bake for @ 8 minutes.
Repeat for second pizza.
